Hubby invited some old school friends over for dinner and mahjong.
I got home at 1800H so started off by putting the chicken wings into the oven. Had them on about 160C to slowly brown up and crisp. A couple slathers of marinade and oil, a flipover later, and they were done nicely. Meanwhile, Annie and I got on to the coleslaw - a smidgen of onion, equal parts of carrot and cabbage, drowned in salad cream, a few dashes of pepper, and just a bit of mustard (the yellow french stuff, not that barbaric american stuff).
Just as the wings were done, Annie decanted them into a platter and put the rib rack in for its turn. It had been sitting in the fridge overnight in a sauce of orange, garlic, pepper, and red onion and was all ready to roast. At the same time, we had a dancing pot of water over the fire, and tipped in a generous load of fusilli. Sliced some tenderloin, chopped some onion, diced some swiss brown mushrooms, and whooshed them into the wok. Salt, pepper, and plenty of italian herbs later, and it was ready to receive the al denta fusilli.
Luckily for me, half the mahjong party was delayed by traffic and work. We only served up at 2000H on account of meat being meat, and needing to cook pork through - the crackling on the top benefitted from it too.
I think the boys enjoyed this one. Although I made enough to kill, they left only one single rib, a couple of lonely chicken wings, a few spoonfuls of pasta, and a small bowlful of coleslaw. They had their food in the usual rowdy way around the dining table, washed down with ice cold Tiger beer served in chilled pint mugs.
And now, the mahjong tiles are clacking away.....and I think I'll be serving up kopitiam-style coffee and biscuits very shortly ;)
